It’s operated by José Ricardo de Carvalho, and the farm balances coffee cultivation with environmental stewardship: roughly half the land is preserved as a nature reserve to support biodiversity and soil health.

• Yellow Bourbon is a rare and prized Arabica varietal that’s particularly associated with Brazil. It’s a natural mutation of the classic Bourbon variety and is prized for sweetness, balance, and complexity in the cup.

• Yellow Bourbon cherries ripen to a yellow colour instead of red, meaning careful selective harvesting is required to pick only fully ripe fruit.

Flavour: Very sweet and juicy — plum, nectarine and sometimes apricot — along with nutty and light chocolate notes that are classic for Brazilian natural coffees.
Body: Medium to full body, thanks to the natural processing.
Acidity: Soft to medium — smooth and inviting, not sharp.
Finish: Clean, sweet finish with lingering fruit sweetness and mild cocoa.
