Brew a strong 200ml of mixed red berry tisane. Steep in hot water for 7–10 minutes for a deep infusion. Let it cool, then chill in the fridge.

Cut the grapefruit into slices and add them to the tea together with the tonic water. Serve the drink on ice and decorate with some thyme. This tangy drink is a sparkling refreshment.
